Clementine Cake

INGREDIENTS:
5 whole
clementines
6 eggs
9 ozs
caster sugar
10 oz
ground almonds
1 heaped
teaspoon gluten free baking powder
METHOD
Cover
clementines with cold water, bring to boil and simmer for two hours.
When cooked, drain and leave to cool.
Pick the green stalks out of the clementines, break into them gently to check for any pips. Process the whole fruit thoroughly in a food processor to a pulp.
Base line a 23cm spring form tin. Preheat oven to 160°C.
Whisk the eggs until fluffy and change to a lighter colour.
Add sugar.
Add baking powder and ground almonds.
Add clementines. Mix thoroughly.
Cook for 50 minutes or until a skewer comes out clean, cover if browning too much. Cool in tin.
